Gluten-Free and Egg-Free Paleo Sunbutter Cookies

Now that I’m 1.5 months into going back on AIP/elimination for Liam, his skin is 99% improved and his stomach issues are slowly getting better. For all of the doctors we’ve seen and told us to switch to formula or to accept his issues as normal, eff you. Changing your diet and lifestyle has a huge impact on your overall well being.

Being on such a restrictive diet has definitely cleaned up my own gut, but it has also given me a HUGE sweet tooth. I’m a believer that your body craves what you need and are lacking. Clearly, that is currently sweets. This past weekend, I tried reintroducing sweet potatoes and chocolate. Guess which one made Liam scream of gas pains. Yep, chocolate. Which brings me to these cookies. Even though sunflowers seeds aren’t AIP, both Liam and I can tolerate them just fine. Plus, sunbutter tastes almost like peanut butter and is an excellent allergen free substitute.

My latest AIP recipes have been a complete fail and have tasted like crap. So this cookie was a complete shocker that it actually worked out well. Enjoy this delicious and fool proof recipe:

Gluten-Free Paleo Sunbutter Cookies

Makes 12 cookies

  • 3/4 cup of Organic Sunbutter (make sure you get no sugar added)
  • 5 tbsp of Organic Tigernut Flour
  • 1 tsp of baking powder
  • 1 tbsp collagen powder
  • 1 dash of baking soda
  • 1 swig if non-alchohal vanilla extract
  • 1/3 cup of nut and dairy free milk

Mix all ingredients into a bowl, spoon out 10-12 cookies (depending on th size you like) and put in oven for 15-20 minutes at 350 degrees.
